Green Mango Salsa

Here’s a fresh take on traditional salsa with a functional food twist – green mangos! These are an excellent source of both resistant starch and prebiotic fiber, which feeds the healthy microbes in your gut. Enjoy this as a refreshing condiment or side salad.

Yield: 12 1/4 cup servings

Tips:

● For this recipe, you will need one medium bowl, spoon, cutting board, and a knife.

● If you’re sensitive to lectins, feel free to remove the tomato seeds and skin using a paring knife.

Ingredients:

● 2 medium green mangoes, peeled and diced
● 1 tomato, diced
● 1 red pepper, USDA organic, diced
● 1 avocado, diced
● 1/2 red onion, diced
● 1 bunch of cilantro, stems removed, chopped
● Lime juice, to taste
● Salt and pepper, to taste
● Optional: chopped jalapeno, USDA organic, seeds removed

Directions:

1) In a medium bowl, add diced green mangoes, tomato, pepper, avocado, red onion, and chopped cilantro.

2) Season with salt, pepper, and hot sauce to taste.

3) Gently stir ingredients until well combined.

4) You may also serve it as a condiment or side salad.
